Pinakbet or Pakbet is a Filipino vegetable stew from the Ilocos region. Its name is derived from the Ilocano word pinakebbet which means "shriveled", in reference to the vegetables being sweated in the pot over low heat until "shrunken".

The ingredients needed to make Pinakbet:
- Get 4-5 garlic cloves; roughly chopped
- Make ready Half an onion; cut into wedges
- Get 1 tomato; chopped
- Prepare 1/3 rd kabocha squash; chopped into 1” cubes
- Make ready 1/2 lb pork
- Get 4 tbsp shrimp paste (Bagoong)
- Take 10 okra
- Make ready 1 handful green beans; cut into 2” pieces
- Make ready Chicken broth
As the dish became popular in the surrounding areas, different versions took root. Pinakbet Tagalog is a Filipino vegetable dish. It is composed of a variety of vegetables and it also has a protein component. I made use of lechon kawali or crispy deep-fried pork belly for this recipe.
Steps to make Pinakbet:
- Prep your ingredients. Have them ready, at hand.
- Sauté the onions first. Then garlic.
- Then add your tomato. You don’t have to wait too long for these to cook.
- Now you can add your pork. I used ground pork but you can use whatever you got. Cook until no longer pink.
- Add in the shrimp paste. Note: traditionally, this recipe calls for Bagoong - purple shrimp paste. I used Thai shrimp paste bc that’s what I had.
- Add in your kabocha squash and cook for about 2 mins. I added 1/2 cup of chicken broth.
- Then your okra.
- Then your green beans.
- Top with salt & pepper, and voila! Enjoy :)
