  3. Wash fish under a tap, do not dry. Remove any bones. Wrap in greaseproof paper and microwave for just three minutes. Flake apart with a fork and add to the dish.
  4. Add Peas and Sweetcorn if using
  5. Put the flour into a medium saucepan, start to heat. Add the milk gradually, stirring to prevent lumps.
  6. Add crumbled stock cubes and butter, stir to mix. Bring to the boil, then turn down to a simmer, stirring all the time, until the sauce thickens.
  7. Pour sauce over contents of the dish, making sure everything is covered all the way to the edges.
  8. Mash Potatoes, with a little butter and milk, to a creamy consistency. Spread over contents of dish, mark with a fork. Sprinkle over evenly the Parmesan Cheese.
  9. Heat in a medium oven, gas mark 6, 220F, for about 15-20 minutes until golden brown and smells very Cheesy!!

This is the easiest fish pie I have ever made. I used cod and haddock for the white fish and a few extra shrimp as there were some left in the bag. It instructions are simple, the sauce with its dash of mustard and lemon had a nice slight "tang". It was also thick enough to bind the fish nicely together, making a definite bottom layer to the pie. To make the filling, pour the milk into a large lidded pan and add the sliced onion and bay leaves.
